Takoyaki is a Japanese snack made of octopus and batter. It is shaped like little round balls. The batter is flavored with a dashi, the base for miso soup.
Here’s how to make takoyaki in 10 steps.
1. Heat the takoyaki pan on medium high heat.
2. Brush the pan with oil.
3. Fill the small round holes of the pan with the batter completely. Don’t worry if the batter overflows slightly.
4. Sprinkle octopus, green onion, tenkasu (crunchy bits of deep fried flour-batter) and powdered katsuobushi (dried, fermented, and smoked skipjack tuna).
5. Let it cook for 3 minutes. During this time, the base will turn brownish.
6. Using skewers, break the connected batter and turn each piece 180 degrees.
7. Push any pieces of takoyaki that are sticking up under the edge of each hole.
8. Let it cook for 3 more minutes.
9. Turn the balls constantly until they are golden brown on all sides.
10. Take the takoyaki out of their holes, put them on a plate, and add sauce and spicy Japanese mayonnaise.
